A soft texture with a mixed rind, this cheese is ripened for 20 to 30 days. Le Grand Manitou is made from a wonderful blend of three different varieties of milk. The buttery and creamy tastes are derived from cow and ewe milk while goat milk gives this cheese a soft caprine finish.
